Quinoa bowls are so versatile!! This one has a lot of different components to it, but is so worth it. Each item is cooked separately, some in the oven some on the stove, and the quinoa was actually cooked in my pressure cooker (just set it a forget it). You can literally but any vegetable combination, along with so many different type of sauces. This particular recipe is like a Mediterranean flavor because of the tahini.

Place the quinoa at the bottom of your bowl and place all of these amazing items on top followed by the sauce and you have one great tasting meal that is light, flavorful and healthy for you.
This by far has become one of my favorite meals. And it's good in the winter or the summer. It is also one of the easiest recipes because I cook it using my pressure cooker, and therefore it takes very little time to complete.
The fresh herbs that are added to it just take it to a new place that some might not be used to experiencing but it is well worth adding to the dish.
I also like to serve mine with some toasted bread cut into cubes, and a little fresh jalapeno
I use a Ninja Pressure Cooker because it has all the features that I like.
Serve with pepper or fresh hot peppers.
Tis the season for bell pepper!!!!! I had so many and I hate wasting food, especially REAL FOOD. So stuffing them is an idea way to use up a good amount of them and it's not as complicated as you might think.
I cooked these up in about 30 minutes. So with a little bit of food prep time you can serve these babies up for dinner in no time.
