So I know this is not one of my healthiest of all the recipes I have here but sometimes you need to have a little fun with your food. One of the things that I find I do well is how to use the same recipes over again but in different ways. This is definitely one of those times.
I'll let you guess what the nacho cheese is made out of......
If you guessed soy that's a no....
If you guessed cashews that is also a big no......
Hmmmm what other type of food do plant based people normally use often?... How about carrots and potatoes????? You read that correct the two main ingredients are nothing more than you normal root vegetables with a few other ingredients.
I did not personally make this one up, I got some help from Veggie on a Penny. The only difference is that I use Tony Chachere's instead of McKay's chicken-style seasoning.
As a 14 year plant based eater I am not necessarily needing it to taste EXACTLY like the real deal but I will tell you once I put all of my other toppings on it I absolutely love how it tastes together.
One of the other things I like to do with the nacho cheese is to steam some broccoli and put that all over it with some hot sauce and or jalapenos. Yummmmmyyyyyyyyyy!!!!!!!
As you can see I don't follow a body builder style diet or anything that feels like I am being restricted. I am a foodie at heart thanks to all of the cooks in my family. So on a Friday or Saturday night sometimes I bust out with the Nachos for dinner. I hope like all of the other recipes you enjoy this one.
