This is one of those easy health meals only if you have all of the separate components already prepared. It can be a healthy dinner idea or a healthy lunch idea depending upon your schedule. For me it is normally a lunch.
For most people I know it's just easier to go out to eat but what are you eating? I am so informed on the food topic that it is hard for me to want to go out to restaurant's. For one thing I worked in some and I know how nasty the conditions can be sometimes, and second they tend to use the cheapest ingredients possible to make the most profit they can. I mean admit it there is a lot of overhead when it comes to eating out, the food, the employees, the bills for utilities. So for me it's just easier and healthier (and doesn't have to take forever) to just eat from home.
You can always add more items of course such as grilled or sauteed veggies, but this is a quick on the go type of meal so the idea is to keep it simple. It's up to you if you prefer to heat the beans since all of the other items are not to be heated.
There is no faster way to make a great tasting salsa that is naturally raw and vegan than to use your vitamix blender. This a great addition to your healthy diet that you can use as a topper to salad, or as a dip with some chips (hopefully organic, or even better homemade).
