This is a very simple yet tasty recipe for a healthier version of "mashed potatoes". That's some yummy cashew cream that I decided to use to replace the dairy, just in case you were wondering.
I like to cut to the chase so the recipe is below.
Step 1 - Steam the Cauliflower
Clean your cauliflower, cut it off of its stalk and then steam. Personally I find the easiest way to do this is to put it in a pressure cooker for about 15 minutes. The only thing you have to do is add a little water, about 1/2 cup.
Step 2 - Cashew Cream
For this step you simply have to add about 1 cup of cashews and about 1/2 cup water to your high powered blender. You can always add more water if you want the cream a little thinned out.
