So why kale? Here are a few things to be aware of:

That says enough to me. I love eating some good dark green leafy kale. Anything in the green family is a great addition to add to your diet. Try to get it in at least 1-2 times per week. This is the best time of the year for kale because it getting ready to be in season.
One of the ways I prepare it is to eat it raw in a salad in place of or in addition to lettuce. Once you have placed the dressing on the kale it will get softer if you let it sit for awhile which will make it easier to digest. One of my personal favorite dressings is actually a pesto sauce from Juliano' s book RAW the Uncook Book. It is a cilantro and walnut pesto. I don't add the oil but use all of the other ingredients which also includes lime juice and a small amount of garlic and sea salt. One other way I can tell you to eat it is on a sandwich. I use a yeast free bread like men's bread or ezekiel and add guacamole, kale, tomato and shredded carrots as an open faced sandwich (I normally make two). This is a very satisfying meal and it has beautiful color to it.
