For a healthier version of a tuna salad there is nothing better than using good old garbanzo beans. Along with the common ingredients that you would use in an animal style tuna salad, your heart and your tummy will thank you.
Pressure cook a bag of garbanzo beans, this is by far the easiest way to get quick fresh beans. If you must, you can go ahead and purchase canned beans, it just wont taste as good in my opinion. I actually used warm beans which made it very easy when I needed to mash up the beans.
Measure out 1 cup of beans (this is for one serving)
Place them in a mixing bowl and either using a fork or potato masher, mash the beans leaving a little bit of a chunk.
Add your normal ingredients that you would use for a tuna salad such as:
Mix all of the ingredients together and your done
I put mine on a bed of fresh spinach and topped it off with some cucumber slices and hot sauce (cause that's just how we do it down here in the south) :)
