Quinoa bowls are so versatile!! This one has a lot of different components to it, but is so worth it. Each item is cooked separately, some in the oven some on the stove, and the quinoa was actually cooked in my pressure cooker (just set it a forget it). You can literally but any vegetable combination, along with so many different type of sauces. This particular recipe is like a Mediterranean flavor because of the tahini.
