This is an amazing dish fresh and nearly raw. It is a great lunch or dinner idea and as usual it is pretty quick. As for the sauce you can make a bunch and save it in the refrigerator.
Ezekiel Sprouted Tortillas
Sun-Dried Tomato Spread
2 cups sun-dried tomatoes
2 medium size tomatoes
1/3 cup cold pressed olive oil
3-6 garlic cloves
1 tbs. dried or fresh basil
1 tsp. sea salt
1 tablespoon of sugar
3 tsp Italian Seasoning
water from soaked sun-dried tomatoes
All Toppings are optional - mix your favorites
Sprouted sunflower seeds
Toast your tortilla for just a minute or two in the oven at about 275
Soak sun-dried tomatoes for a few hours until they get soft. Keep the water for the sauce. Place sun-dried tomatoes and all other ingredients into Vita-Mix or other high powered blender. Slowly turn up the speed to 10 and pour a little water in at a time until you get the consistency that you like.
Once the tortilla is toasted spread the sauce and then add your toppings.
