So this is an amazing vegetarian / vegan soft taco for an easy dinner. This one was completed with the help of hubby who made the fresh tortillas and the pico de gallo salsa. The picture is actually a vegan version of it but you can always add cheese or grilled organic chicken or non farm raised fish if you feel the need, but trust me when I say it is so not necessary. As I see it even though I don't eat meat and most of the time I refrain from all dairy as well, I feel the most important step in the health of you and your family is to add as much fresh food as you can as your first step.
I have many reasons why I have personally chosen this path including health, animal cruelty as well as the environmental impact that it makes by consuming animal flesh. It's also less time consuming when you leave these items out.
One of the best recommendations I have for ease in preparation is to have the pinto beans cooking in a crock pot so when you come home all you have to do is get them to their mushy "refried" status otherwise this step will take quite some time.
Now all you have to do is the assembly. Do it in whatever order you wish but I do beans, guacamole followed by cabbage and finally the pico. The freshness of the tortilla is AMAZING. I hope you enjoy.
